Black Bean Brownies

(GF, RSF, DF, V, T)

Serves 16

A delicious fiber-packed, fudge-like brownie to satisfy your sweet tooth
and serve you with a hint of protein (thank you black beans). 

Ingredients

BROWNIE

  • 1¾ cups of black beans 
  • 3 eggs 
  • ½ cup raw cacao powder 
  • ¼ cup oat flour
  • ½ cup maple syrup
  • 1 tsp vanilla bean (extract is fine)
  • 1 tsp baking powder
  • ⅛ tsp flaked sea salt 

Cacao Drizzle

  • ¼ cup coconut oil 
  • ⅛ cup oat milk
  • ⅓ cup cacao butter 
  • ½ cup maple syrup 
  • ½ cup raw cacao powder 

GF – Gluten free
RSF – Refined sugar free 
DF – Dairy free
V – Vegan 
T – Tran-seasonal
Best in spring // summer 
Best in fall // winter

Method

FOR THE Brownie

  1. Preheat the oven to 175C / 350F. Grease a 20cm shallow baking pan. 
  2. Blend the black beans until they become a smooth paste. 
  3. Place the bean paste into a bowl and stir in the dry ingredients. 
  4. In a separate bowl whisk the eggs and vanilla bean then slowly mix this with the dry ingredients. 
  5. Combine until smooth. 
  6. Pour into the baking pan and bake for 20-25mins. 
  7. Remove and let cool on the bench.

FOR THE Brownie

  1. Place cacao powder into a bowl
  2. In a separate bowl, melt coconut oil and cacao butter then stir in maple syrup and oat milk.
  3. Slowly pour the liquid into the cacao while continuously stirring 

  4. Generously pour the drizzle over the cooled slab of brownie. Top w/ crushed brazil nuts, fresh raspberries and fresh cherries (be mindful of pits) and cut into portions (I like to cut into 16 pieces).
