Macadamia Moon Loaf


(GF, RSF, DF, V, T)

Makes 1 Loaf

Adapted from the My New Roots Life Changing Bread, this loaf will be a staple in your life – You’re WELCOME!
It is super simple to make and contains a variety of nuts and seeds that act as both healthy fats and quality protein – by noshing on this bread, you’ll be actively supporting your blood sugar levels and the ripple effect of that is like a hug to hormones, sleep, energy and so much more.

Ingredients

BROWNIE

  • ½ cup macadamias, chopped
  • 1 ½ cups oats
  • 1 cup sunflower seeds
  • ½ cup ground flaxseeds
  • ¼ cup shaved almonds
  • 3 tbsp psyllium husks
  • 2 tbsp nutritional yeast
  • 2 tbsp chia seeds
  • 1 ½ cups water
  • 3 tbsp avocado oil
  • 1 tbsp maple syrup
  • 1 tsp pink salt 

GF – Gluten free
RSF – Refined sugar free 
DF – Dairy free
V – Vegan 
T – Tran-seasonal
Best in spring // summer 
Best in fall // winter

Method

  1. Combine all dry ingredients in a bowl.
  2. Whisk maple and avocado oil together and pour into dry ingredients.
  3. Add water and stir thoroughly.
  4. Pile into a lined loaf tin and compress.
  5. Let sit for 2 hrs.
  6. Place in the oven on 175 C / 350 F for 20min.
  7. Remove from tin and flip, bake for another 40 mins.
  8. Store bread in a tightly sealed container for up to five days. Freezes well too – slice before freezing for quick and easy toast (this sentence from My New Roots)
