Seasonal Frittata Muffin

(GF, RSF, DF, T)

Serves 12

Shop locally and you will be (by default) shopping seasonally. When you support your local farmer’s you also support your body’s ability to transition with the seasons. Pick 3+ veg from your farmer’s market and include them in the recipe below.


  • Choose 3 varieties of veg, we used sweet potato, zucchini and spinach
  • 1 medium sweet potato, diced
  • 1 small zucchini, diced
  • 3 handfuls of washed spinach, finely chopped
  • 16 eggs
  • Sprinkle of Savory Seed Dust
  • Avocado Oil for baking
  • Salt and pepper to taste

RSF – Refined sugar free
DF – Dairy free
V – Vegan
T – Tran-seasonal
Best in spring // summer
Best in fall // winter


  1. Preheat oven to 200C // 375F
  2. Place your diced veggies on a banking tray and drizzle with avocado oil and salt
  3. Bake for 20 mins
  4. Remove from the oven and scoop an even amount of cooked veggies into each muffin tin (you might want to oil the tins first)
  5. Top with an even number of chopped spinach
  6. Crack all the eggs into a separate bowl and whisk until smooth
  7. Evenly pour the mixture between the muffin tins
  8. Top with salt, pepper and a sprinkle of Savory Seed Dust
  9. Place in the oven for 15-20mins or until cooked through
  10. Serve immediately or refrigerate and use within 7 days from baking

    Makes 12 muffins

Loaded Veggie Pasta

Use the pasta base as a foundation to add in whatever seasonal veggies you have in your fridge. Think: Diced eggplant, chopped tomatoes, broccoli, green beans
