Seaweed + Roast Veg-Egg Bowl

(GF, RSF, DF, T)

Serves 1

Don’t get too stuck on the ingredients we have used here, you can use any seasonal veggie pairing that gets your taste buds excited! The aim of this bowl is to deliver you a variety of nutrients provided from a mix of different seasonal veggies, go with whatever you have in your fridge and remember to check it off with the Well Served guidelines.


  • A few leaves of Kale 
  • Handful of arugula / rocket 
  • Handful of baby spinach 
  • 4 florets of broccoli 
  • 4 florets of cauliflower 
  • 2 kindler potatoes, halved 
  • 1/2 zucchini, chopped 
  • 1/2 cucumber, chopped 
  • 1 egg, boiled for 6 minutes 
  • 1/2 green pepper / capsicum, chopped 
  • 6 coins of leek 
  • 2 tbsp mixed seaweed, soaked 
  • 1/4 avocado 
  • 1/2 fresh lime 
  • Drizzle of olive oil 
  • S+P to taste

RSF – Refined sugar free
DF – Dairy free
V – Vegan
T – Tran-seasonal
Best in spring // summer
Best in fall // winter


  1. Preheat oven to 200C // 400F and line a baking tray with parchment paper. 
  2. Place any of the veggies that require baking on this tray and toss with olive oil, salt and pepper. In our case: Broccoli, cauliflower, zucchini, potatoes. Bake for 15 minutes or until cooked to your desired taste
  3. Layer a bowl with the greens, the roasted veg (they can be warm or cold), and the rest of the ingredients
  4. Drizzle with olive oil and squeeze fresh line over the top
  5. Salt and pepper to taste

    Serves 1

Use the pasta base as a foundation to add in whatever seasonal veggies you have in your fridge. Think: Diced eggplant, chopped tomatoes, broccoli, green beans
